Acidic ingredients such as tomatoes, vinegar, and citrus can react with the metal and weaken the protective surface, especially during long cooking times. Delicate fish, eggs, and sugary sauces may also stick, burn, or leave stubborn residue.
Strongly flavored foods can leave behind aromas that affect later dishes, while excessive moisture from boiling, soaking, or storing leftovers in the pan can lead to rust. Sudden temperature changes may even cause cracking or warping.
To protect cast iron, clean it carefully, dry it completely, and apply a thin layer of oil after use. Avoid long acidic cooks, unnecessary soaking, and thermal shock, and the pan can remain reliable for many years.
