Why Chicken Gizzards Deserve a Place on Your Plate

One of their biggest nutritional advantages is their combination of protein and micronutrients. Protein helps maintain and repair body tissues, while vitamin B12 contributes to normal neurological function, DNA synthesis, and healthy red blood cell formation. Gizzards also contain iron, including heme iron that is generally absorbed more efficiently than iron from plant sources, as well as zinc and selenium, which support several normal biological functions. They should not be treated as a miracle food or a cure for deficiencies, but they can be a nutrient-dense addition to a varied diet.
The main challenge with chicken gizzards is their naturally tough texture. Because the gizzard is such an active muscle, cooking it quickly can leave it extremely chewy. Slow, moist cooking methods such as simmering, braising, pressure-cooking, or slow cooking can soften the meat considerably. Once tender, gizzards can be fried until crispy, grilled, sliced into stir-fries, added to soups and stews, served with rice, or prepared with flavorful sauces and spices. Whatever method is chosen, poultry safety remains important, and gizzards should reach a minimum internal temperature of 165°F (73.9°C).

Chicken gizzards are therefore better described as a nutrient-dense food than as a trendy “superfood.” They provide plenty of protein and useful vitamins and minerals while often costing less than more popular cuts of meat. They may not be appropriate in large amounts for everyone—particularly people who have been advised to restrict high-purine organ meats because of gout—but for most people who enjoy their flavor, properly prepared gizzards can be an inexpensive and satisfying addition to a balanced diet. Their combination of nutrition, affordability, and culinary versatility gives this frequently ignored part of the chicken plenty of reasons to deserve another look.
